Today is the day.

Today is the first day of my Day Zero Project.  I'm extremely excited to be starting with my list.  One of my goals is to leave 101 inspiring notes around public places.  Today I left 2.....only 99 more to go.  I believe I have also inspired my sister to make a list as well, so I guess I can cross that off my list as well.

I also went to Postcrossing.com and got my first address to send away my first postcard.  It will be very interesting to see where my first card comes from and I'll be sure to let you know when it arrives.

That's all for now, stay tuned to watch my progress. :)

The hunt for great granola.

I recently realized how much of my grocery budget I had been spending on granola bars.  We go through at least 2 boxes a week usually more.  Spending over $3 per box for 5 bars, so I decided to see if I could find a good recipe to make my own.  Luckily I found it.

The thing I really like about this recipe is that you can put anything you like in it as long as you have about 3-4 cups of fillers ( eg. choc chips, almonds, raisins, dried cranberries, mini marshmallows) and it is so easy.

Easy Granola Bars

  • 3 cups quick-cooking oats
  • 1 (14 ounce) can sweetened condensed milk
  • 2 tablespoons butter, melted
  • 1 cup flaked coconut
  • 1 cup sliced almonds
  • 1 cup miniature semisweet chocolate chips
  • 1/2 cup sweetened dried cranberries

Directions
  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
  2. In a large bowl, mix together the oats, sweetened condensed milk, butter, coconut, almonds, chocolate chips and cranberries with your hands until well blended.

                                           here are the dry ingredients

Press flat into the prepared pan.

Bake for 20 to 25 minutes in the preheated oven, depending on how crunchy you want them. Lightly browned just around the edges will give you moist, chewy bars.
Let cool for 5 minutes, cut into squares then let cool completely before serving.

Here is the final product.

Enjoy :)

101 Goals in 1001 Days

I have spent quite a bit of time today coming up with my list for 101 goals in 1001 days.  This is for the Day Zero Project.  You are to come up with 101 goals that you would like yourself to complete in the next 1001 days, which is basically 2.75 years.  Alot of people make lists for a year at a time but this project allows you seasons to complete some larger goals you may want to include in your list.

I wanted to do this because I have found that lately everyday seems to be the same and they all just blend into one another.  I don't really feel like I get anything accomplished other than the everyday grind.  So I'm hoping after all this is done I can look back at my list and be proud of the things I've done.

I will be posting my list in a new tab at the top of my blog here tonight and will update it for everyone to see the progress.

I'm excited!!!! :)

Positivity here I come.....no seriously

So I have decided that I'm going to be more positive in my life.  Now don't get me wrong I'm in no way a negative person.  Negative people really bother me.  However I'm not an insanely crazy everything is perfect , sun is always shinning positive person either.  I think that I could benefit from some positivity though.

After having two children in two years I've kind of lost myself and am determined to be who I was.  Confident , hard working, all these good things that I want back.  I gained a lot of weight with my pregnancies which lets say it , made me feel like crap.  Well, I've lost almost 30lbs in a couple months and am going to continue.  Now seeing what I'm able to do if I put my mind to it has got me wondering, what else could I do if I really tried?

That's where the attitude change comes in.  Instead of being unhappy and doing nothing about it, I'm taking action. I will reach my goals and have everything I want in life.  I've made a list of things I want to accomplish in my life and can't wait to start crossing them off.  There are some big goals like open my own bakery, and smaller ones like put new carpet in my living room.  It was nice to sit there and think of all the things I want to do and write them down.

So this is my plan and I will keep you posted on how it is going.....I'll even post pictures as I reach my goal weight!!  ;)

Cold Cold Cold

After the last few days of -39 C I think I'm officially ready for spring.  Don't get me wrong I do love snow. I love the huge fluffy flakes falling but this is just too much.  So I thought I would show some of my spring time cookies to will warmer weather this way.
